The Reserves

Every stone the Cartel releases begins its life deep within volcanic sedimentary rock, laid down over millions of years and drawn today from a small number of quarries we have worked with for generations. What reaches the table is a fraction of what is mined — the rest is returned to source, unfit for the Cartel's mark.

Kala Namak, known in trade circles as Himalayan black salt, owes its signature aroma to trace sulfur compounds locked within the rock itself. It is this same mineral complexity that our grading system — PGA, or Purity / Grain / Aroma — was built to measure.

Reserve Kala Namak, 500g

PGA Grade • Whole Stone • Availability: By Appointment

Our founding release. Whole, unmilled stones hand-graded for density and colour, ranging from deep amethyst to near-black. Sold in weighted lots to trade partners and private collectors who mill to their own specification.

  • Origin — Sedimentary reserves of the western Himalayan foothills
  • Format — Raw stone, 20–60mm fragments
  • Signature notes — Sulfurous, mineral, faintly egg-like on the mill
  • Recommended use — House milling, display, chef's table

Kala Namak Precision Mill

A calibrated grind developed with tableside service in mind. The Precision Mill disperses evenly over a plate without clumping, delivering the mineral aroma of the stone in a single, controlled pass.

  • Grind — Micro-dispersion, 0.3–0.6mm
  • Vessel — Weighted glass mill, refillable
  • Signature notes — Softened sulfur, rounder finish than the raw stone
  • Recommended use — Finishing salt, tasting menus, front-of-house service

Smoked Malabar / Pink Bottles

A pairing collection built for the collector's cabinet rather than the daily table: Kala Namak slow-smoked over Malabar coconut shell, bottled alongside our Himalayan pink reserve for contrast on the plate.

  • Smoked lot — Cold-smoked over coconut shell, 14 hours
  • Paired lot — Himalayan pink, coarse grade
  • Signature notes — Smoked lot: toasted, resinous; pink lot: clean, mildly sweet
  • Recommended use — Charcuterie boards, botanical pairings, gifting
